FDA Issues Second Edition of ‘Bad Bug Book’

 

The Food and Drug Administration updated its handbook of basic information on foodborne bacteria, viruses, parasites, prions and naturally-occurring toxins on it is website.  The second edition of the “Bad Bug Book” includes new chapters on Cronobacter, Enterococcus, Franscinella tularensis, phytohaemagglutinin and venomous fish, along with updated chapters on Salmonella, Listeria, pathogenic Escherichia coli, among others.

The chapter updates include information on the characteristics, habitats, survivability, detection, food sources and analysis of the bacteria, viruses, parasites, prions and toxins.  Chapters also include a separate section for consumers written in easily understandable language focusing on food safety and how to reduce the risk of foodborne illness.
